On an offset stick burner ( OC Brazos ) , how long a stem, 2.5 or 4 " ?



The grate on my Brazos is 19" wide. If I cook two pork butt side by side, they take up the entire grate and a 4" stem will hit the meat.


I can adjust to this, if there's other advantages to the 4" stem.
 
The analog thermometers either have a dimple or a ring on the stem, and it's not at the tip, it's up on the stem. That is where the wires are joined and the temperature is taken. So, when buying a thermometer you don't want the dimple too close to the body of the cooker. I think the Tel-Tru therms on my Eggs are 4", and for my drums I buy the 10" or 12" because I want to know the temp in the center not at the edge.
