I've never cooked beef cheeks.

Piney this was first go at them. I rubbed with meatchurch holy cow, cooked for a bit on the grates, then panned with some beef broth and Lost 40 beer. After an hour or so I foiled the top of the pan. Kept plenty of bark but the liquids helped get all the fatty goodness broken down.
