Well the Bears are on a well deserved BYE week but that doesn't mean we still can't smoke something.

Menu:
Spare ribs and bone-in chicken thighs

Been experimenting with rubs for riba and this one is a take on the "Best Ribs in the Universe" rub.

Chicken thighs getting what's quickly becoming my signature brine. This time a little rosemary added.

Cook:
250 for a little over 3 hours on the ribs, chicken for about 2 hours.

I'd cook if it still wasn't 90+ outside. I did it all summer but I'm tired of it. Welcoming the cooler weather this week.

Got an 18.5" WSM and using Basques sugar maple lump for fuel. Applewood chips for smoke.

I'm lazy so I'm cheating with the DigiQ [emoji41]
