I read a thread on here ages ago about using a SS mesh strainer with the middle pushed up as a cold smoking device.

Yesterday, I finally picked one up from the supermarket (for the heady price of £2.75!), pushed the middle up, loaded it with some pretty coarse hickory shards / dust and lit it using a tealight.

It worked fantastically! The Mrs. said that the cheddar I smoked was some of the best she had ever had :)

So, to the original poster; Thank You!

Great job on smoking cheddar....

It will taste even better if you let it rest in a sealed package for a few days to a week.

Cheers Dude. Yeah, I usually wrap the cheese in greaseproof paper, kitchen roll, then some clingfilm and finally keep it in a Tupperware box in the fridge for at least three days.....but, new toy and all that!!!
