Years ago when I used to spend an obsene amount of money in New Mexico there was a menu item called stacked enchiladas. They're just like rolled enchiladas but flat. Today I got close to those New Mexico plates. Definitely not exact, but edible

1# Ground beef browned, drained most not all liquid
Added one half thick chopped onion- translucent
1 teaspoon Taco seasoning
1 teaspoon seasoning salt
1 can rinsed black beans
3/4 cup Young Guns Red Chile Sauce
3/4 cup Durango Diner Green Chile Sauce
Simmered on low stirring occasionally

Keto friendly tortillas heated in toaster
Layered with meat sauce, Tillamook and avocado
