Our local grocer had spare ribs for $1.99/lb and ended up buying eight racks. I cooked six racks yesterday for a party and two today for Bucs game. I seasoned the two today with hot chilli powder and Killer Hogs Hot rub.

I very simply cooked them at 225F for five hours and used hickory for smoke. I didn’t wrap them but did flip them meat side down during hour 3. No BBQ sauce was used during the cook.

The flavor profile was excellent and in summary I was very pleased with the final product. Here’s a few pictures for viewing and thanks for checking it out.

I'm going to agree with the crowd that those are some very nice looking ribs. Judging by the rubs, I'd bet they have some good kick to them, just the way I like.
