I'm getting ready to play with my new toy I have a 5 lbs. eye of round ready to go I'm planning on making Baltimore pit beef what temp and time would you go? this hot water thing doesn't feel right? thanks for any help!
 
I sous vide eye of round all the time. I've tried many different times and temps but have had great luck with 131 degrees for 18 hours. It turns out perfect every time. Have fun with your new toy!
 
i was pretty happy with the results for my first try, my wife loved it. the sous vide was a no brainer. thanks again for the help!

I was skeptical about the whole sous vide thing but I'm a believer now. In fact, FedEx just dropped off my 2nd Anova. I couldn't pass up the $99 sale last week.
