My favorite food is Mexican and the little Sope allows you to add a lot of good ingredients all of which I love. Nopalitos (cactus paddle) kinda reminds me of green beans and even looks kinda like French cut green beans once they are trimmed, and boy are they good when you cook em with tomatoes, onions, and bout 50 cloves of garlic. They do have to be par boiled and drained a couple of time to get the okra like slimy stuff off of em before use. They make a good Sope for someone trying to steer away from meat for whatever reason. I like the Sope both with meat and Nopalitos or just one or the other. The salsa verda was made from scratch, beans from dried, and tomatoes from our garden & canned in our kitchen - fresh, made from scratch is what makes a dish and will allow you to use some pre prepared ingredients like these little sope shells and still have a winner.
