Best accessory is a weed burner from Harbor Freight! It makes lighting a WSM (and a chimney) quick and fun.

I have all 3 sizes of the WSM. The only "accessories" I have are a $5 oven therm. on the food grate and a piece of folded aluminum inside/on the top part of the 18's door.

Foil the water pan w/ heavy duty foil and don't bother using water.

WSMs are simple and are easy to use after a quick learning curve.

PS- Strongly suggest using lump.
 
PCShrews already shared my link, but I also agree with Harbormaster. The WSM is a fine smoker right out of the box and gets better the more you use it. A lot of the gaskets, etc, that I did to mine were mainly because I was impatient. I would have probebly still done them, but they weren't required.
