Wow, found craft paper and smoked some wings with worsesthire sauce, salt and pepper on top of this paper found from winco store. It let's the grease on top stay then dissolve and then fall down. Used Frank's red hot for finishing in a Tupperware. Cant wait for brisket tomorrow!

I do much the same, and am a HUGE advocate for grilled wings.

My (unrequested) suggestion is to ditch the paper for ease of grease dripping and interaction with the heat. You WANT those flare-ups for flavor...

We do the same with the sauce in Tupperware (bowls) for 90% of wing cooks.. (unless we're (re)heating sauce for tossing in a skillet/sauce pan).
