Beautiful results. What type of hardwood did you use? Do you use a rub on the skin?
 
used mostly apple wood, rubbed with olive oil and put Hogs n Heat under and on the skin. the skin was nice and crisp when they came off but got alittle soft after i covered them in foil to let rest
 
I am planning to cook a 12# breast this weekend, how much time do you think it would take at 250 Degrees? I appreciate the help.
