I got into community supported agriculture and as a result we have a lot of veggies coming in, especially yellow squash. I decided we needed to find some new ways to use squash. I ran across a site that had smoked stuffed acorn squash so I thought well lets try it.

Had some left over taco meat so why not smoked taco stuffed squash.

Prepped the squash and put in the DC at 200 for about 30 min to get a little smoke.

Pulled them and stuffed with taco mix and cheese.

Smoked for about 30 min at 250.

It was good. The squash had a little crunch which I like. Next time I will use a bit fattier beef to keep from being too dry.
 
I have a bumper crop of yellow squash in my garden this year.

Now, I know what I'm doing with some of it....maybe with some leftover pulled pork. :-D
