Man ! that is a serious M&C. Good work. I was wondering about smoking M&C myself. I was gonna add cubes of smoked pork loin but the bacon looks much better.

Here's an idea: how about putting cubes of the pork loin inside the mac and cheese and putting chunks of bacon on top?
