decided it was time to pick up a beef shank and make some tacos, about 10lbs bone in shank

got the shank smoking around 1am saturday, this is what it looked like at 8am when i removed it from the smoke

after smoking, the goal was to get it up to around 200 on the internal temp via roasting with some beef base in the roaster

set up for serving, meat is able to be pulled from the bone with a fork so everyone could make their taco as desired. set up a spread of lime, corn tortillas, jalapenos, cilantro, chopped onions, salsa verde & cotija

thanks for the kind words folks. i'd see if your butcher can hook you up with a large shank like this and give them a go sometime
