I have about 8 Pounds of pork belly sliced about a quarter inch thick. The store sliced all of the pork belly they had. I ground some with pork loin and made breakfast sausage.
The Question is what else can I do with the 6 lbs. I have left?

Grind it up and makes brats. It is about the right fat content.
 
That's a good idea. I'm hoping for a few more ideas before I make up my mind.
