Haven't done like that in a while, but when I did I used either whatever beer I was drinking or apple juice with chunks of apples in it.

Anytime I cook a whole bird now I spatchcock it and don't look back.
 
I, too, have joined the spatchcock brigade. However, I used to do beer can chicken regularly and I used whatever beer I found laying around the fridge, especially if it was something oddball (not Shiner) left behind by one of my sons-in-law. One time I was out of beer, so I pulled out some of my wife's leftover wine and tried it. I think it was better than the beer.
