Well got home for work late and decided to make some fish taco’s. Nothing special but pretty good never the less, paired up with some black beans and a salad.
A big pinch of Mexican Achiote Paste (can get at any Mexican store or on line VERY cheap), olive oil, fresh squeezed lemon sea salt and fresh cracked pepper. We have been to Mexico several times and all the beach cantinas use this paste. I highly suggest trying it for a real authentic Mexican swing.
This fish was a tilapia but any good white fish will do just fine.
