We will now almost double our capacity on the trailer. Received it yesterday and got her all set up and first burn done. Cooking overnight on it tonight for a private catering event. This is replacing the Humphreys currently on the trailer. The Shirley trailer smoker will still be the heavy lifter but this will help in the sleep and output department.

When opening the crate for first inspection everything looked great and unscathed for the most part.

Then after taking the sides down completely to connect the handle and roll her out...I noticed that the plastic wrap was stuck between the smoker frame and the tire. Didn't seem correct.

Yep, not right. Some how 8 bolts and nuts had come loose that hold the axle housing to the cart had ALL come loose and made this scenario go down.

After an hour of talking to Chris to make sure my plan to rectify would be OK (figured it would but I also wanted him to be made aware of how we received his product) and a run to the hardware store I was ready to re-assemble. Which I had to run to the hardware store again to purchase a bottle jack as we didn't have one on site. She was good to go and got her seasoned and ready to go.

Cograts and very nice and will be getting my mini in the next couple weeks . On the photos just open in photo shop and resize them and they will load just fine on the Brethren loader .

Not really. My explanation fits but Chris didn't think so. I assumed they lined it up and just barely put the nuts on...and then forgot to ewwgu, ewwgu them tight with the impact. They were barely on and backed out on the trip from vibration.

Cook wise, quite happy. Is it the same flavor profile and smoke ring as my Shirley, no. But that was not the expectation.

Usually, I would have not slept for today's Catering gig but loaded her with briskets and butts and went to sleep. Got started at 4am for sides and finished by noon after setup/drop off.

We get it to temp WAY faster than many claim. It was ready too cook in under an hour using a 25cfm blower with Fireboard controller. 100% fan speed until 50 degrees of target, set to auto and close the chimney down to just about an inch open. Then it is just dead nuts on temp the rest of the time.

Well, I assumed that after all the T&E these went through that when you have all 7 racks in that you could fit hotel pans in between them, you can't. :( At least not without them touching both top and bottom racks severely.

Something I assumed and should have checked. Not a deal breaker for us but could be for someone else. It certainly limits us using it for sides if we wanted.

Again, not a deal breaker as the extra racks was for packing with chicken and/or ribs. Still though, I would think that would have been thought of.

2 1/2" tall full size won't hold as much but may work in a pinch.

Yep, just not what we use normally, or what most people use. Finding foil and paper products is a huge problem right now.

We went 3 months without finding full size pans in any type of quantity.

I shoulda asked...
