Went by the Spanish market with the intention on buying some pork bellies that were on sale to make some bacon but they were all cut up very small. Grabbed a section of beef ribs that caught my eye :cool: I used a brisket rub since my beef rubs haven't arrived yet. Pulled it off the smoker after it hit 200º internal and was very happy with the results.
