The best corn tortillas come wrapped in paper! Talk about fresh. THey were only about 2 hours old!! Just babies!!
Browning the rice. Tried Jasmine rice this time. Best dang Spanish rice I've ever made.

Mexican chorizo for the beans.
Flores Meat Market makes a mean chorizo blend. This one went into the discada.
GOOD STUFF!
Discada meat goes in. Basically thinly sliced round and sirloin marinated in Wooster and Mojo Criollo.
Browned until most of the liquid evaps.
Just stand there and watch it drain. This is why I don't make discada too often...............Heart Attack Central!!
Tortillas getting some color and flavor.
