My parents came to visit the wife and me for a few days this past week. We had a good visit.



On Saturday I once again expounded upon the merits of the HNF method of brisket cooking to my dad who's given to LNS. The brisket went on at 7:40am and went into the cooler to rest at 3:20pm (it weighed in at 14.48lbs before trimming, smoked with pecan at an average temp between 285-300*). We enjoyed supper at 6:00.

It came out very tender and juicy.

We enjoyed a great meal as as a family. The only thing that would have made it better was if my brothers would have been with us as well.
