Just finished making some mods on my WSM and wanted to try it out with some ribs. I picked up a slab of St Louis cut spares on sale at the local Publix. Made the mistake of going by the store again and saw some of the best beef short ribs I had see in quite some time. Instead of firing up the pit twice, I decided to make them at the same time and turn it into two meals.

The spares made a great Saturday dinner.

Finished the short ribs and put them in the refrigerator for Sunday lunch. Note to self: pull the meat when it is hot and soft, not the next day. :doh:

Used the short rib meat in a mushroom gravy and it turned out awesome. In spite of being hard as a rock when I started, it turned soft and succulent after a few minutes in the gravy. Definitely, good eats times two!

I just did my first beef shorties this weekend and they were farkin awesome...they will definitely be featured in future cooks.
