I used Dr.BQQ rib rub and Sweet Baby Rays for the last 20 mins. They were the best I have done yet.The girls say they were a little spicy but still good. The temp never moved once I set it .The drip pan is a deep dish pizza pan from Pizza Hut filled with water sitting on a propane stove grate which works better than the 3 legs

I have a deep dish pan too. Thanks for the "grate" idea. been using 3 balls of aluminum foil.

from the 'not dumb to me' question department:

Why does the drip pan nee to be lifted on that grate and not just put on the plate setter?

thanks.

Tact

By creating an air space between the platesetter and the pan the water doesn't evaporate as quickly. Great idea for a spacer instead of the little feet.

The girls in my house almost always say my ribs are a little spicey. But, I never have left overs. Ribs look great, bro!
