So….
I got drafted into a rib cook-off here locally. They said we will supply you a Weber to cook on..
I was like yes!
Thinking to my self that, I have done well in rib cook-offs using my kettle.

So I agree and sign up. Get to reading the rules in detail… they are supplying each contestant with a Weber Genesis ii, which is a *gasp* gas grill.

Rut roh..talk about a fish out of water….

I mean I assume I can get it to hold something close to a steady temp…
but what about smoke?
Is there even room on one of these to do an indirect cook??

Any words of wisdom?
 
Play around with the burners. Start with turning the middle one off and the outer 2 on medium heat and work from there. Maybe shut off the front to burners and leave the back one going. Just have to get it to where you want it. Also like he said get the color you want and wrap.
 
Back in the day, did some pretty good ones on gassers (obviously doesn't compare to smoking or charcoal). I put the cooker on 200-225* cook them low and the wrap in foil.
