My New Years eve cook consisted of a rib roast and deditos (fingers). The rib roast was rubbed down with Oakridge Santa Maria and Habanero Death Dust, 60/40 mix. The deditos is a South American treat from Colombia. Consists of dough stuffed with a salty cheese called "Queso Costeño". Since this cheese is not readily available, I used Feta which is pretty close in taste, but slightly different in texture. All of this was done on the Kamado Big Joe.
