Decided to get into competitions next year. Did a little practice today on ribs. Well.... everything but actually boxing them.

Looks great! FYI, might want to get the bark off your wood. It can cause a more acrid smoke & bitter flavor. Good luck on the circuit:razz:

Thanks! I usually peel the chunks before they hit the fire
