Some PorkMafia Sweet Pink dry brine, then a coat of ParkMafia Memphis Mud. On to the Big Joe at 250 with a few chunks of Cherry wood.

Prickly Pears are in season, so Habanero Prickly Pear Margaritas were the drink of choice today.

Just over three hours later, the toothpick said they were done. Much quicker than usual. That's why you need to keep checking. Don't go by time or temp, probe them. Four coats of Chad's Yes Dear BBQ Red Sauce. No wrapping! No need for that nonsense...

Me too. Normally it's fresh lime juice, triple sec & tequila. But prickly pears & habaneros make a tasty margarita.
