KC

Original recipe is

1 pound corned beef finely diced
1 pound ground pork
1 1/4 cups sauerkraut roughly chopped and squeeze out as much liquid as possible
5 large eggs
3/4 pound swiss cheese grated
2 slices of fresh rye bread finely diced
1 teaspoon salt
1 teaspoon caraway seeds

Preheat cooking apparatus to 450 and drizzle olive oil on a 9 x 13 baking dish to evenly coat
Combine all ingredients in a large mixing bowl and mix by hand
Roll mixture into golf ball sized meatballs
Place snugly in a baking dish (original recipe says meatballs should be touching each other)
Roast for 20 minutes or until you reach an internal temp of 165

This is roughly what the cookbook says and I didn't really follow this exactly but you get the idea.

Those look fantastic Ric!! Well done!
Can't believe how much Miss Scarlett has grown. What a cutie!
