Hearing beef process are heading up because of the drought in California so figured it was time to stock the freezer..
4 packer briskets and a whole boneless rib roast.

The briskets hit the deep freeze yesterday.

Today we broke down this 21 pound rib roast

Here it is on a full sheet pan... and my new 10 inch Dexter knife. It's so sharp I think you could get cut just looking at it.

Cut into a couple of rib roasts, and a bunch of about 1 inch steaks...

Lots of good eating in our future. That ought if last us a while.

I am particularly interested in this thread since I just bought my first chest freezer a couple weeks ago. Way to go! :)
 
Thanks Gary - There is a butcher down the road form us. They will process cows, pigs, deer, etc, but this they get in from out west somewhere. The prices are good, we like the quality, and we like dealing with them.
