I bought a rack of lamb that is a sell by 12/21. I want to make on the 25th Is it still going to be good if I keep in fridge until then or do I need to freeze today only to start thawing Friday?
 
gov't sell by dates and safe to eat dates are two different animals(so to speak).
I bought two bone in cowboy cut rib eyes Mon and the are cryovacked and are wet aging till Sat night.
I think you'll be fine.

I just posted a link yesterday in some thread, the safe time the govt. provides to refrigerate fresh meat is 3 to 5 days after you bought it. So in theory, if you had bought it on the last Sell-By date, it would still be good kept under refrigeration for 3-5 days after that. You should be fine.
