Do you have to cut rib racks so they won't touch the vortex or can the full racks be put on?
 
I assume you're talking about hanging them? I've not had a problem hanging any when the rack is in the top position and I place the hook through 2-3bones deep into the smaller end. Sometimes the slabs hang close but surprisingly it doesn't seem to overcook the close ones.

I mainly cook for competitions, so I do trim the racks down to 9 or 10 bones, but at home I have done them without cutting and my experience is the same as Suds.
