Well we opened yesterday at 4:00 and was slammed till about 8:30. We opened at 11 today and didn't stop all day our POS said we had 209 orders. We went through 3 cases of butts, 10 chickens, 9 racks of loinbacks, and 250# of potatoes.
It wasn't all that smooth though we only have 1 fryer out of 3 working, the gas pressure is too low. The gas company is supposed to be there tomorrow to turn it up. We worked hard but at least it wasn't in the trailer.

The gas man came by this morning and had everything fixed in 30 minutes, just the check valves on the hoses. He knocked the guts out and it works great.
We did a little better today but we still have a lot to learn, it's not near as simple as the trailer. We had a cook from another restaurant come by and help and he changed the kitchen around a bit to make it a little smoother. I'll get some pics when I get the signs up this weekend.
