Hey all,
Made something completely new and outta the box.........for me anyway.
Started with the following;
Tossed the chicken and a half of a spaghetti squash on the grill;
This was the rest of the filling;
Pulled the chicken after it came off;
Saute`d up the mushrooms, onions and garlic;
Mixed up all the stuffing ingredients;
Set that aside and worked on the sauce
Assembled the rolls;
Top with sauce, cover, and back to the kettle;
I let those "bake" for about an hour, uncovered, topped with mozzarella cheese, and back on to melt the cheese;
The spaghetti squash was perfect;
And served it up like this;
It was absolutely delicious!
