Had a hankering for some Ribeye so decided to pick up a small roast to cook for Sunday dinner.

Lil' 3.17# Roast rubbed down with Olive Oil, Midnight Espresso Rub and S&P

Cooked it until 118 IT, pulled it off and let it rest until 130 IT and then back on to the kettle for a sear.

Sliced up..Med Rare all the way through :thumb:

That looks fantastic! I was thinking about a leg of lamb for Easter but some family we're inviting does not appreciate lamb. :rolleyes: (*) I might do beef instead. Thanks for the inspiration!

(*) Last time we had them over and I was doing lamb, I made some very nice pork chops to provide an alternative. They ate all of the lamb and left some of the pork. :wink:
