A Birthday Dinner for my wife - Prime Rib! One of her all time favorites.
About a 3 1/2 lb roast, bone in -
Seasoned with Duck Fat, Pepper and Oakridge Santa Maria -
This is gonna be good, I can tell already -
After getting the Golden's de-iced yesterday, I did a clean out this morning and set it up for indirect / reverse sear with the divider plate. The Prime Rib and sweet potatoes (both orange and white) on the indirect side of the grill, temps running 340-350 F -
Almost up to 125 and ready for the reverse sear -
Over to the hot side it goes for a few minutes per side -
Flame pic wasn't as good as expected, but here it is -
After resting a bit I sliced into it. Perfection! -
Plated with the Sweet Potato and Roasted Carrots -
This was most definitely an excellent birthday dinner! Mrs lunchman was quite happy.
