I have a recipe the uses roasted/peeled peppers, that are then saute with cilantro lime juice, seasonings, etc. The texture of the peppers when used in my recipe is somewhat mushy, not firm at all. How might I prepare this concoction and save it for 4 - 6 weeks? Anyone have experience with this sort of thing?
