This is my cook thread for the "Pork Throwdown".
I wanted to do pork overload, so I made a sausage stuffed pork chop, wrapped in bacon.

I started by browning some Hot Italian pork sausage with some apples for the stuffing.

Once cooled, I used the sausage/apple mixture to fill a pocket cut in the pork chop and wrapped the edge with bacon. (sorry for the lack of photos) (also, I made plain pork chops for the wife, she is not adventurous)

The chops went on the kettle indirect until almost done, then I seared over direct heat and basted with a spicy chili and garlic glaze.

Lastly, I heated some chicharrones with some chili powder to make a chrisp topping to add some texture.

That's porktastic! That really sounds like a great combination. I bet that chili garlic sauce was awesome on that
