I did a small boneless butt that I got from HEB several weeks ago in buckboard bacon style. I gave samples out and everyone loved it. So i went to RD last week and got a 2 packages that holds 2 boneless butts. 4 total boneless pork butts. When I opened up package up to start applying the cure, I found that they really were butchered up in the most literal sense. A huge cut down the side and almost cut in half to remove the bone. At first I thought of tying them up till I smoked/cooked them, but figured they would just fall apart when I began to slice up the meat. So I continued the horizontal cut on each one resulting in 8 pieces of pork butt. Applied the cure and vacuum sealed each one. Gonna go 2 weeks on the cure. I guess I'm gonna have to go back to HEB to get boneless butts that aren't split down the middle. Or try some of that meat glue that I've read about to put the RD pork butts back together.
