I have the oportunity to get 3-4 whole boneless picnics for a good price. I was thinking of making them into BBB to take home to TN for Thanksgiving week.

Anyone made BBB from picnics?
 
Heheheee. You beat me to the punch on that link. :wink: That said I've only Bukboarded one or two picnics (usually I Buckboard butts or loins), and I did remove the skin, and bones, but went longer in time due to thicness. Picnics have some muscles with more myoglobin making them darker, but the curing process and finished product came out pretty good. If you get too western when removing the bones, use some butcher twine to hold it together.
