two whole tomatoes sliced thin is enough to cover the whole pie plus some sliced raw sweet onion, salt, pepper, dry parsley:

Pickled tomatoes? OK I have never tried them but it definitely looks good.
 
Sounds and looks really good! Is there cheese involved? Think I see some creamy goodness in there.

I was wondering the same thing...and I'd try some basil in the mix too. that reminds me a bit of a zucchini/tomato pie I do (more of a quiche, I guess since there's eggs in the mix)
