Quick question: did you cook the cauliflower prior to stuffing?

Sorry, just noticed your question. As far as the cauliflower rice, I used a couple of bags of frozen CR, and dumped them straight into the stuffing concoction. I gave it maybe 5 mins in the stuffing mix over low heat before turning the heat off... just enough time to incorporate. No need to overdo it as the CR will be cooked inside the stuffed pellets once they hit the pellet grill (or whatever grill you are using).
 
Looks awesome, Robb! Could be another good thing to cook with some pulled pork I’ve got in my freezer (and regular rice for me).
