You might want to rethink your meat supplier... don't know if the judges will dig that pig you have there. :mrgreen:

caliking - you are right our pig wouldn't pass inspection plus my kids gave the name Brisket. I ran our 1st cook last weekend and - I was amazed how they held temps.

Thanks for all the other UDS post- we learned a lot from this forum before we built them
