Hey y'all! I'm new to the forum but not new to BBQ, at least eating that is. I grew up on Eastern NC style BBQ and in the last several years have grown to love other "styles" of BBQ or as some around here refer to as non-vinegar sauce BBQ. I enjoy "pig pickings" and love to cook on a cooker (gas) my father and I built out of an old oil barrel (which seems to be pretty popular around NC). In the last couple years I have really enjoyed eating smoked meat and have added a smoke box to our gas cooker. I've wanted a "real" smoker for a couple years now and I'm ready to bite the bullet and buy one...actually have one on hold right now until I can pick it up next week. I know I'll learn more about smoking and BBQ here and really appreciate any and all the advice I can get.

There are many members with years of experience that are willing to answer your questions and share their knowledge to guide you in the right direction. Collectively there is a wealth of experience and knowledge among the membership, including you. Don't be afraid to jump in there and share your experiences as well.

Greetings and WELCOME from another Brethren in the approximate area (Hillsborough, but I work in Raleigh and wife's family is in Durham).

GLAD to see you are biting the bullet and getting a smoker!!! Gas pig-cookers are great and I use one for catering and competing in North Carolina Pork Council whole-hog contests.
