That brisket looks really great! I am working up the courage to try brisket once more. I've cooked 2 briskets in my life, and still have at least 5 pounds of good chili meat in the freezer waiting to be disposed of. Brisket is still my nemesis.
Thanks y'all. The flat was good, but could have been a little better. Gave a third of it to a buddy. The wife, myself, and the old vet at the bar ate another third. The rest I'll nibble on over the next couple days. Maybe some nachos are in order.
Looking forward to pulling the point out of the freezer in a week or two.
