Loosely following a recipe (that I don't have) for porcupine meatballs...
Used some cheap 80% burger from the sale bin at the store.
Added uncooked rice, eggs, green onions, kosher salt, CBP, thyme, SPOGOS, and worch. None measured...

In a pan with some pecan chunks for smoke.

Near 40 minutes I drained the fat.

And added a pint of our roasted tomatoes with serrano peppers (smoothed out a bit with the boat motor) and a half pint of beef broth.

The rice is not done yet so...
Simmered that for an hour or more.
Took the loaf out and simmered the sauce to thicken some.

And plated with smashed up spuds with the tomato gravy.

Spicy, smoky, and concentrated tomato flavor. Rice was done but still had a bit of chew. Just right.
