I go by 61sleepercab as a owner of a 1961 B Model Mack sleeper cab truck . I am semi retired and cook for local groups like the middle school boosters, church events and the local community building. I got my start at big cooking as a Fraternity Kitchen steward planning meals for 20 members and purchasing $20,000 worth of groceries per school year. I like BBQ and try to sample local Q when I travel. I have helped with deep pit wood coals beef, bbq chicken over charcoal, and whole hog -deer over open wood fire for crowds from 50 to 500. I now have a Army MKT 85 field kitchen trailer which can cook for 250 people and am eager to try it out. The field kitchen runs on catalytic diesel burners "MBUs" and can boil, bake and grill quantities. I want to build a portable grill/smoker/ oven combination for local group use. I have oven cooked whole beef brisket and pork shoulder but want to learn more about real BBQ and handling/preparing/ slow cooking/ and serving better BBQ. I have lived in West Virginia all my life and the home of Southern beans and corn bread, WV hot dogs with chilli sauce and cole slaw, and pepperoni rolls invented by WV coal miners. I hope to learn and share what little I know. Mark
 
Mark, Welcome to the Brethren!! There is a wealth of knowledge and experience amung the members. If you have a BBQ or cooking related obsession or hobby this is the place to be. Sit back, soak up the knowledge and jump in there and be sure to share yours as well. If you can't find or get an answer to the question here then there is probably not an answer available.

BTW - KCBS is having a bbq contest in Buckhannon, WV on June 20th. Buckhannon is only about 100 miles northeast of you! Might want to check it out, as it is RARE that KCBS sanctions a contest in WV! Hope to see you there!
 
Welcome to the forum 61sleepercab, glad to have you join us and hopefully take part in the other forums.

We don't have a lot of rules here other than spam and advertising are not permitted, the rest is just common sense, courtesy, and mutual respect for one another.

You'll find a great group of people here with a willingness to help and guide you, regardless of of how simple or how complicated you think your question may be. You'll also find that there are many ways to achieve great food, there is no single "cookie cutter" method as some have been conditioned to think. You'll just have to try a few different methods and soon you'll master the way that works best for you.

We'll be here to guide you and answer your questions as you begin your journey into smoking and BBQ. Pretty soon you'll go from asking questions to posting pictures of your progress, and we will all share in your experience as true Brethren.
