Finally found some big beef chuck ribs at the local costco and couldn't refuse. Combined 12.58 lbs, kosher salt, black pepper, garlic powder and cayenne. Louisiana Grills pellet smoker at 245 for 9 hours. Did not know beef ribs would stall. First at 170 and then at 175 for over an hour. Stressed out and wrapped and threw in oven at 300 for about 45 minutes and rested half hour. Came out better than I thought, family loved it, but bummed that it stalled. Happy new years and enjoy the two photos.
