Bought a 10 pound pork belly at Costco for $3 a pound last weekend. Half of it became delicious pork belly burnt ends; I cured the other half.

The Keg was at 175 when we left to walk the pooch at 8:15AM

Was a little worried when we got home 90 minutes later and the smoker temp was 225, and the bacon temp was 160.

Was delicious baked. FWIW bacon at our grocery store was $6.99 on sale for 12 oz.

Once the internal goes above 145°, your bacon is technically fully cooked, so it can be eaten without any additional cooking. However the fat benefits from a light pan fry or baked like you did.

As a reference a lot of deli bacon is smoked until 130°, so it's more limber and still has to be cooked.
