New to the site and new to the Q. I have gas grilled for years owned a Weber Genesis, Char Broil, and now a Napoleon Rogue 525 (love this grill) and did a couple of racks with a smoker box, but it isn't the same. So recently I've gotten more interest in actual charcoal wood smoking so I recently purchased a PBC Classic and already done a whole Chicken, St Louis rack and Dinos... Probably some of the best if not the best meat I've tasted. Really loving the PBC. Starting to get it dialed in with heat adjustments when needed. The PBC will be my smoker and Napoleon will be my griller for burgers and the such. Hope to learn and pick up some good advice on this site.
