We got about two pounds of this from the food bank this morning. I don't know what it is so I don't know how to cook it. Anyone know what it is? I don't know what those thin bone pieces are. Thanks very much.

The marinade helps with tenderness, and I grill them until they probe tender, and usually use one slice as my test piece to get a physical sample from. But my cooks are less than 10 minutes. They are a hot-and-fast, turn-and-burn kind of thing.

They are also known as Korean Style ribs or Kalbi , so you could search for marinade/cooking suggestions.
 
You can add some kiwi fruit or fresh pineapple juice into the marinade to tenderize them, but don't go too long or they'll turn to mush.
